Pasta with vegan lentil “meat” balls

Recipe:
LENTIL MEATBALLS
I flax “egg”
2 tbsp olive oil
1/2 tsp chilli flakes
1/2 yellow onion
3 cloves garlic
1 1/2 cup cooked lentils
1/4 cup vegan Parmesan
2 tbsp coconut flour
1/4 cup chopped cilantro
1 tbsp tomato paste
1 tsp salt
Cracked pepper
Preheat oven 375F. Sauté, onion, chilli flakes, and garlic until fragrant and onion is soft. Throw everything into food processor and pulse till JUST combined. If it’s too wet, and 1 more tbsp coconut flour. Form into balls (I got 10) and place in fridge for 30 minutes. Sauté balls on stove top until browned on all sides and transfer to parchment lined cookie sheet and place in preheated oven for 20 minutes.
Serve with your favorite pasta, tomato sauce & more vegan cheese.

Sauce Ingredients:
2 tbs of hoisin sauce
1 tbs of sesame oil
1 tbs of sweet soy sauce
1 tbs of black soy sauce
1-2 tbs of chili oil ~ depending on spicy level desired
1 tsp of coconut aminos
2 tbs of water
Stir Fry Ingredients:
1 tbs of sesame oil
2 garlic cloves, minced
4 cups of chopped shiitake mushrooms
1 cup of fresh basil
2 handfuls of greens of choice
2 cups of bean sprouts
1/2 of chopped peanuts
1. Add hoisin sauce, sesame oil, sweet soy sauce, black soy sauce, chili oil, coconut aminos and water to a mixing bowl.
2. Mix until sauce is well combined. Set aside.
3. In a pan over medium heat, add sesame oil and garlic. Cook for 5 minutes or until garlic is golden.
4. Add mushrooms and cook for 10 minutes. Stir occasionally.
5. Add greens and bean sprouts.
6. Add sauce and mix gently. Cook 5-7 minutes.
7. Add basil. Mix gently.
8. Add noddles. Mix gently.
9. Top it off with chopped peanuts!
10. Enjoy

Broccoli pasta with chickpeas
3 cups pasta of choice
1 medium red onion, chopped
2 cloves garlic, minced
2 tbsp tomato paste
2 cups broccoli florets
3/4 cup coconut milk
1 tbsp nutritional yeast
Salt to taste
1 can chickpeas, drained and rinsed
Cook the pasta according to instructions on packaging. Meanwhile, sauté the onion and garlic in a different pan in either water or oil. When they soften, add the broccoli florets and tomato paste and continue to cook for a further 4-5 minutes. Next add the coconut milk and nutritional yeast, stirring everything together. Season to taste with salt and add the pasta together with 1/4 cup pasta water and the chickpeas. Stir everything together for a few more minutes to allow the sauce to thicken and serve.
