Have you tried my Chickpea, Mushroom & Spinach Curry yet?  So tasty and simple, and it made me so happy that those who have tried it, loved it!

Recipe:

Ingredients:

1 small onion finely chopped
8 oz. mushrooms sliced or quartered
1 tbsp oil
2 tsp garlic powder
1 tbsp curry powder
1 tbsp cumin
1 tsp chili powder
1-2 tsp coriander
1 tbsp + 1 tsp tomato paste
2 cups sliced tomatoes
1/4 cup marinara or tomato puree
1 15 oz. can coconut milk
1 15 oz. can chickpeas
2 cups baby spinach
Cilantro and red chili flakes for serving

Instructions:
Add onions and oil to pan, cook for 3 min. While those are cooking, you can cut the mushrooms and add to pan. Cook another 7 min, stir occasionally and add some water to prevent burning if needed. Add spices, tomato paste and sliced tomatoes. Cook 2 min, stirring. Then add remaining ingredients except the baby spinach. For the coriander, you can add the 1 tsp and cook 5 min, taste and add another tsp for deeper flavor. Cook at gentle simmer for 10 min, partially covered. Add spinach, stir and cook another couple min until wilted. Serve with chopped cilantro and red chili flakes.

Wild blueberry loaf cake

Recipe:

Ingredients:
1 cup of wild blueberries, dusted with flour and set aside.
1 cup and 1/4 of flour
1 tsp of cinnamon.
1 tsp of vanilla powder.
2 tablespoons of lemon juice.
1/2 cup of plant based milk with 2 tsp of apple cider vinegar. Leave aside.
2 very ripe bananas. You need them to be very soft.
1 cup of coconut sugar.
1/2 cup of coconut oil, melted.
1 tsp of baking soda.
2 tsp of baking powder.

Method:
1. Preheat the oven to 350F.
2. Grease a loaf pan
3. Mix dry ingredients together really well
4. Mix wet ingredients together
5. Add wet to dry and mix well
6. Fold in your blueberries
7. Bake for 1 hour or until centre is cooked

Ingredients:
2.5 cups plain flour
4 tbsp cornflour
1 tsp baking powder
1tsp baking soda
3/4 cup sugar
1/4 tsp nutmeg
2 tbsp ground flax mixed with 5 tbsp cold water
1.5 cup dairy free milk
2 tsp vanilla extract
1 tbsp apple cider vinegar
1/2 cup veg oil
4 tbsp cocoa
5 tbsp hot water

Instructions:
Preheat oven to 180•c and grease a loaf tin with a little oil. Add flour, cornflour, baking powder, soda, sugar and nutmeg to a large bowl&stir well. In a small dish mix flax seed with water to form a gel.
Add flax gel, dairy free milk, vanilla, apple cider vinegar and veg oil to the bowl and stir briefly to incorporate. Don’t overmix.
In a medium mixing bowl, mix cocoa with hot water. Pour in half of the vanilla batter and stir well.
Using a tablespoon, alternate spoons of batter into the loaf pan until all batter is used up. For extra swirls, use a chop stick to swirl the top layer of the cake. Bake for 1 hour, until a toothpick comes out clean. Allow to cool fully before slicing.

3/4 cup almond milk
3/4 cup sugar
2 tsp vanilla extract
3 tbsp veg oil
half lemon, juiced and zested
1/2 cup non dairy yoghurt

Dry
.
2 cups all purpose gluten free flour
1/4 tsp xanthan gum
1.5 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup blueberries
.
Preheat oven to 180•c and line a loaf tin. Mix all wet ingredients together in a bowl until smooth. In a another bowl, add all dry ingredients apart from blueberries. Stir to combine, then add to the wet ingredients and mix to form a smooth batter. Fold through 3/4 cup blueberries, saving the rest. Fill loaf tin with batter and sprinkle blueberries on top. Bake for 60 mins, until golden and a toothpick comes out clean. Cool completely before slicing.
