How about a beautiful and healthy bowl?
That’s exactly the food I like :)
You only need rice, broccoli, falafel, guacamole.
My favorite falafel recipe is the ing:
•200g chickpeas
• 1/2 onion
• 2 cloves garlic
• 1 tsp cumin
• 1 tsp salt
•1 tsp cilantro
• 1/2 tsp natron
• 1 tsp cinnamon (that’s the game changer)
How to:
Cut onions and garlic as small as possible.
Mix everything into a food processor until you get a sticky dough.
Don’t over mix it.
Heat up a pan, add 2 tbsp oil and fry the falafels 3 minutes each side.

Coconut Ceviche
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1/2 purple onion, chopped
1 cup of cilantro, chopped
1 cup of red radishes, chopped
Meat of 2 young coconuts, chopped
Juice of 2 limes
Salt/pepper to taste
Tostadas, optional
Avocado, optional
Chili powder, optional
1. Chop all your ingredients.
2. Add in a mixing bowl.
3. Add your lime juice and mix well.
4. Let marinate for an hour in the fridge before serving.
5. Garnish with avocado and chili powder – optional!
6. And serve over some tostadas
7. Enjoy!

Check out this Rainbow Fruit and Veg Freekeh Salad with golden beets, roasted baby peppers, pineapple, cara cara oranges, crispy spiced chickpeas, parsley, romaine, red cabbage, pumpkin seeds and a citrus vinaigrette
Here’s how to put this bowl together:
1. Cook freekeh according to package, set aside to cool
2. Toss 1 can chickpeas with 1 teaspooon oil, 1/2 tsp smoked paprike, 1 pinch cayenne, 1 pinch salt and 2 pinches garlic powder and roast at 425 for 20 minutes
3. Roast baby peppers in the oven for 15 minutes, let cool and destem
4. Boil golden beets for 10-15 minutes to soften. Set aside to cool
5. Make a bed of romaine and red cabbage and top with fruits, peppers and beets, freekeh, chickpeas and pumpkin seeds
6. Make the dressing: 2 tablespoons extra virgin olive oil,3 tablespoons orange or lemon infused vinegar, 1 teaspoon maple syrup, 1 pinch garlic powder, 1 pinch salt, 1 pinch italian seasoning mix well. Drizzle and enjoy!

Ethiopian Spiced Lentils

Prep time:5 minutes
Cook time: 30 minutes
Yield: 6-8
2 cup split red lentils
5 cups water
4 garlic cloves minced
1 onion diced
1 teaspoon olive oil
5 tomatoes, chopped
4 tablespoons berbere spice
1/2 teaspoon cayenne pepper
1 teaspoon salt
2 tablespoons tomato paste
1. Boil lentils in water for 20 minutes
2. Meanwhile, fry the garlic and onions in oil until toasty 3-5 minutes
3. Add chopped tomatoes, salt and cook until tomatoes release juices
4. Add berbere spice, salt and tomato paste and cook for 5 minutes
5. When lentils are soft, add spiced tomato and onion mixture to the lentils and simmer for 10 minutes to combine.
6. Taste for salt and adjust if needed.
7. Serve with salad of lettuce, tomato, cucumber, tomato, avocado and cabbage mixed with lemon juice and rice.
